steamed ladies fingers

Steamed Ladies Fingers (Okra) with Superior Sauce is a dish which can be attempted by anyone, even a beginner. The superior sauce is only a nice sounding name but it is in essence, a combination of light soya sauce and oyster sauce. This recipe takes approximately 3 minutes to cook and less than 10 minutes to prepare.

Some people dislike the “slimy” inner part of ladies fingers when it is stir-fried. When you steam it whole, you do not have to deal with the “slime” – which is just the natural juice from within the vegetable. I find this dish very healthy as it only involves cooking by way of steaming, though in preparation of the superior sauce, you do need to add in a little bit of garlic oil. As for the type of ladies fingers, choose the tender ones which are usually lighter green in colour.

This is my recipe for Steamed Ladies Fingers with Superior Sauce



  • 10 to 15 pieces ladies fingers (wash and slice off the upper stalk end)
  • 4 cloves garlic (chopped finely)
  • 3 tablespoons palm / peanut oil


Sauce (mix together)

  • 1 tablespoon warm water
  • 2 tablespoons light soya sauce
  • 2 teaspoons oyster sauce
  • a couple of dashes of white pepper powder
  • a pinch of msg (optional)



Fry chopped garlic in oil till golden brown. Remove garlic and set aside.

Mix 1 tablespoon of the oil (previously used to fry the garlic) with the rest of the sauce ingredients in a suitable bowl.

Place ladies fingers in steamer and steam for 3 minutes. Remove from steamer and place on a serving plate.

Pour sauce over the steamed ladies fingers and garnish with fried garlic.

Serve hot.

    Easy dish to do, I like. I don’t mind(eating) the “slime” in the lady fingers as long as I am not the one handling it during cooking and preparation. :O

    steam okra’s…must try…my current method is stir fry with belacan & udang kering and chopped chillies.
